Friday, May 7, 2004 Warm sandwich for a surprisingly dreary spring day It's been warm and sunny for the last few weeks here, and this morning's showers caught me by surprise.
1/2 mango, peeled and diced Heat olive oil in a frying pan over medium heat. Add field roast. If using bitter braising greens, add them now. Otherwise, cook for three to five minutes and then reduce heat to low. Add lettuces and mango. Heat, stirring periodically, until greens are wilted. Toast bun. Sprinkle mozzarella over greens mixture. Cook over very low heat, stirring as little as possible, until cheese melts. Ladle mixture onto bun (I used a hot dog bun and ate it openfaced). It's pretty good. My mango was a little tart and I used a mix of red lettuce and more-bitter braising greens; I think if I did this again I'd use the braising greens with a sweet mango or the lettuce with a more tart one.
