12/31/2002 Entry: tangy onion-coriander crackers

2 tsp onion powder
2 tsp powdered coriander root
1-3/4 cup white flour
1/4 cup whole wheat flour
3 tablespoons wheat germ
1 tsp salt
1 tsp baking powder
1/4 cup solid shortening (I used crisco)
4 tbsp lemon juice
2/3 cup soy milk

Preheat oven to 425.

Mix dry ingredients. Add shortening and blend with fork or pastry blender until mixture resembles coarse crumbs. Add lemon juice and soy milk; stir with fork and knead until mixutre is just barely smooth.

Roll out on floured surface. Cut into shapes (I used leaf-shaped cookie cutters). Place on ungreased, nonstick baking sheet and bake for eight to twelve minutes.

Cool on rack for at least a few hours. Crackers get crispier as they sit.
