today's munching cheese: English Cheshire. It's a very crumbly aged cheddar, with a texture nearly like wet chalk -- not the very firm, resiliant cheese most people think of when "cheddar" is the subject. The wedge I got doesn't have a rind, but it does have a whitish bloom on the outside. It's very sharp and salty, and has a more complex flavor than I usually expect out of cheddar. And it's peach-colored. yum.
