03/11/2002 Entry: leftovers!

Last week's wilted green salad turned out just fine. Z has determined he's quite fond of the medley of flavors, whereas I preferred the simpler wilted spinach salad I made last month, that had only five ingredients. I did end up using orange segments, which I think was a great idea -- both because it was tasty and because we've got *way* too many oranges and apples at my house!

Saturday night, I mixed the leftover salad with the leftover leeks, another half-bottle of the rasberry salad dressing, another orange, olive oil, and salt, and made it into a pasta sauce. As tart as the sauce was in the saucepan, I was surprised at how mild it turned out once it was on the pasta; I ended up adding lots and lots of freshly grated parmesean.

Last night, I made something very close to the Deluxe Potato Kugel in one of the Moosewood cookbooks (maybe Enchanted Broccoli Forest?), 'cept I subbed out one of the potatoes with a sweet potato, and the sour cream with three grated cheese (parmesean, aged gouda, fresh gruyere). That was...interesting. I was surprised at how strongly the egg flavor came out, given the relative quantities of vegetables (large) and eggs (small), but that's what a kugel is supposed to taste like. Next time, I think I'll put in the effort to make a crust & make a vegetable pie.

Tonight, more leftovers. We've got another box of vegetables coming on Wednesday!

Speaking of deliveries, I'm terribly impatient for my package from Peggy Lutz to arrive. And waiting for me at home is a package from Zappos.com, who still don't carry feminine calf-height low-heeled laceup boots, but do carry all sorts of other interesting shoes.
